I usally just create a batch file and shut down process's or apps that way,  this way you can customize your shutdowns of proc or programs.

its fairly easy to do,, just google creating batch file's

 
EDIT TO ADD:   I don't know/use  Vista, so the above batch file stuff is for XP only,

You can use the task scheduler in Vista to do this stuff, but it's less than intuitive if you find computers at all intimidating.
