Is it necessary to have at least a 1000W power supply if one were to have two NVIDIA GeForce GX2s?

I would say yes, just to be on the safe side.
 
Also, make sure that you select Corsair's PSU.

The recommended minimum is 850W for quad sli.
The only thing that keeps me wishing on a wishing star.
