the single intel 240 is $318
the 2x pack of 240 is $798
 
am I missing something?

Yep.    The 2 x 240GB 520 series is minus the $162 for HDD already priced in.  Each drive is $480 for $960 for both.  Add the $162 to $798 and it is $960 or add the $162 to the single $318 and it is $480.
 
I think I got it right.
