Yes Im a noob
I used the Asus Utility to OC my 7700k to sqeeze a bit more out of it. I am not happy with the Temps and want to back it off.

75-78c gaming with h115i cooling spikes to 85 (thanks Kaby Lake)

Is the only way to revert back to default voltage is to load "optimized defaults" WIll that change anything else significant? This was the only change I made- but unsure if DS had anything specific prior to shipping to me.

If you load optimized default settings in Bios, you’ll lose any adjustments DS made when building the rig.    There might be none or there could be fan speed adjustments and XMP profile that sets ram speed.   Not sure what they changed in your case.

A better option is to go to Bios, Advanced mode and then the Tools tab.   Within that is where DS saved Bios settings during the build.   Load the latest , possibly top, saved profile to get back to where it was when first delivered.

I didn't see any profile. However- I noticed that Xmp didn't have profile 1 set up. My memory is 16 gb ddr4 2666Mhz - will setting xmp to profile 1 automatically allow me to gain the 2666 performance?
