Medium settings, 2x AA, I got around 30-40 FPS in the Crysis demo with an 8600GT. It will depend on the resolution you play at. 1024x768 is my norm.

Stuart, what is your budget?  From all the stuff I have heard, I think it might be wise to go with 800Mhz RAM

RAM: 4GB 1066 Dominators
Graphics: 2x 8800GTX 768MB
Sound Card: Fatal1ty
HDD 1: 2x 150GB raptor (RAID 0)
HDD 2: 1x 150GB raptor
HDD 3: 320GB western
Liquid cooling (red)
