Just curious but how long before DS will offer the ryzen 5000 chips in their builds?

The 5000 is available as a configurator option, but shows as backordered until at least April:

The 5600X and 5800X, both more appropriate for a pure gaming use IMHO, are available now.

I just got my 5950x build yesterday and ordered in late Jan. Granted that does nothing to indicate what supplies will be like if you order in the future, but they certainly had better luck getting their hands on one that I did on my own.
