Thoughts on this insane beasty?  $ 1,229 at Newegg.com but not in stock yet.  I know it's pricey and would it be better to just slap two 5870's in crossfire or?

Waste of money.

Two 5870's in CF will outperform for $800. Not that you even need two 5870's unless you're trying to max games at 2560x1600 resolution. If you're running 1920x1200 or lower resolution a single GTX 480 will max just about everything (minus the usuals, Crysis and Metro 2033) for $500, and a single 5870 for $400 will come close but there are games a 5870 can't max at 1920x1200 that a 480 can.
