I have an i7-6700k at 4.8ghz and a GTX 1080 FE. I am considering buying another 1080 and running sli. However, I have a 750 watt psu. Would I need a more powerful psu or am I ok?

You should be good to go. Each card draws about 180 watts load, so go for it.

TDP for 6700k is 91w. 180w x2 for the GPU's. So 360 + 91. 451w.

Now let's include your other hardware, such as drives and motherboard. You're probably using 550-600w. Now let's include your CPU overclock. I'd say 600-650w (that's being very, very loose... no way it's pulling that much more from it's OC, but let's be safe here.

Assuming you're not planning on overclocking your GPU's. I'd say you safely have an extra 50-100w of headroom with everything under a heavy load.
