I've never understood this, adding a second Yxxx series card for nVidia would make the second card just handle PhysX and have the main card handle just rendering, right? And I know some people have just added a lower end graphics card like a GT240 to just do that. So what exactly is the benefit of SLI over dedicating another video card for PhysX?

SLI and Physx have nothing in common. Physx is just a gimmic used in a couple games to add some effects, SLI is scaling two or more GPU's together to act as one more powerful GPU.
