Until Intel updates their software to allow TRIM to run with the X79 chipset boards, I would not use RAID. Your RAID SSD's would slow down once all the memory blocks are written in.
Regarding fast vs reliable... remember, all drives can fail. RAID 0 is for fast... RAID 1 is for reliable.
