Tyler answered your 680i/780i question in this thread, i think that the 850s case would be best for you as it is an excellent overall aircooling case, the 950s case only really focuses its airflow on the cards and you have the gts cards that dump the air outside the case so you wouldnt need that focus.

in reality though, the choice between the two is primarily aesthetic as they are both very viable options for your setup.

you may want to upgrade the power supply to the 850w, but i dont think you need to. im not sure, but you might be pushing it under load with all of the overclocking, quad-core, and SLI 8800's.

Other than that, Office 2007 does not utilize more than one core, offers huge file sizes and takes ridiculous amounts of resources for what it does. i personally despise the suite. that looks like a pretty solid setup.

Thanks!

Is it the 780i or the 790i that offers a performance boost to SLI?

Both my wife and I need the Office software to integrate with our work, so I don't have much choice there.

If I am pushing the PSU a bit, then I will upgrade that also.

The 790i, although the 780 may have come with slight improvements over earlier chipsets, i dunno. Here's a link to some random review:
