Upgrading GPU

Hi guys,
I am getting closer and closer to purchase a new graphic card.
A quick recap of what I want:
 
Lets start with what I have
 
Intel core i7-950 (stock clock)
6GB A-data 1600mhz (3x 2gb)
Evga X58 3 sli mobo
seagate barracuda 1.5 tb 7200.11
Blu ray drive
dvd drive
Card reader
Wireless N wifi adapter
6 green led fans
fan controller (with touchscreen)
2 cold cathodes
Frostchill or Frostbite liquid cooling (cpu only)
all this is on a corsair  tx-750 watt psu
the 12v rail has 720 watt, and 60 amps (if I remember correctly)
 
Lately I have been spending a lot time looking at benchmarks, and I have narrowed down my choices to the following:
gtx 570
hd 6970
hd 6870
hd 5870
 
I am mostly for the hd 6970, since it is not much more expensive than a 570 and seems to have better performance (i am going to game @ max settings with AA on a 22.5 in. 1080p monitor) I would like to know what is better, and please sate why. I know that nVidia has physx but, is that really helpfull? The 6970 can hook up a lot of monitors on a high res., but I am only going to be using 2 monitors (so that can't really help me).
 
I used the extreme psu calculator, and I am not sure about my psu. I DO NOT want to upgrade my psu. If i run my pc on max load, and I plan to keep the psu for 3+ years, will it work perfectly? Is there any risk of a overload? For example if I run Furmark will it crash. Also I tend to run my pc from 2-6 hours a day, and sometimes 24 hours ( but only 1 or 2 times a month). So will my psu be enough, including space for capacitor aging. The hd 6970 has a TDP of 250watts, but i have heard the power consumption can go up to 305watt (I plan to keep stock settings in powertune), so is that on stock clock speeds? How much leftover power would I have if i take a 6970?
 
I have my mind set on upgrading, I am stuck between the gtx 570 and the hd 6970. I am sorry to bug you guys with my psu questions, I know it can run with a single card, I just want to be perfectly sure it will run well on load.
