Whats really the difference? Will the Veloci raptor just make my game's i.e. Empire total war loading screen before going into battle go much faster than as opposed to a regular 500 gb hard drive? And will I see a really noticeable difference?

you will notice the difference in loading time from OS boot to apps and etc, and it helps games cause it has a much lower seek time then a 7200rpm drive. seektime is important to games.
however now SSDs are taking the crown from the veloci raptor, once the vertex 2 comes out, it should take the crown. |

Almost sounds like doing a raid 0 with 2 vertexes might be unfruitful because of the sata II 300mb/sec transfer rate cap.. Or am I wrong?

depending on the raid, I believe its 300MB/s per line, in a raid you have 2 lines
