Would like opinions on this selection. Primary use will be flight simulators (IL2, DCS, MSFS) in VR.

Welcome to DS.Awesome
That is one nice and strong system and with those programs you will use most of that RAM. There are articles that extol the 11600K and 11700K chips for gaming but I am not familiar with any of those games' ideal play requirements.

A word regarding the Velox: it is a DS proprietary exclusive design, very roomy and somewhat large for a medium case pc . More importantly, the window is on the right when facing the pc and the mobo is installed upside down with the gou on top of the cpu. All writing on mobo and gpu(s) will be upside down.

The configuration gurus will be chiming in with more educated opinions.

Well I didn't ask about monitor resolution because with that gpu you can rock 2k and no problem with 4K.

As to "outputs", it depends on the gpu you get but most will have at least 1 HDMI and 1 or more Display Ports. Strongly doubt VGA and/or DVI.

I think hoserator meant the 12600K and 12700K. The 12700k is just about side-by side with the 12900k for gaming, but it looks like you don't want to spare the budget on this one. It's about as strong as you can get without getting silly, and your uses demand a lot for best results. Good build.

Thank you guys for your inputs. I’ve lurked here off and on for a bit. I had hoped to have put together a good system on the first try.   I may look at the 12700 strictly from a $$$ standpoint.

I love the Velox X case. It is cool to the touch unless I am taxing my RTX 3080 in an AAA game on Ultra settings. Then the heat dissipates quickly through the total mesh front, top, & back.

It is a beautiful design with smoked glass sides. The motherboard placement is upside down which allows my EVGA FTW3 RTX 3080 long colorful display to be appreciated compared to looking at a backplate.

With the RGB chassis lighting and the RGB on my AIO fans I sometimes find myself just enjoying watching the colorful display like staring at a beautiful painting.

The component side is on the right if looking from the front so it is important to place it where you can enjoy the magical doings of your new Digital Storm Beast!

Good build sir and an excellent card, but I'm thinkin MS Flight Sim is a rare beast of a program that could actually make use of more RAM in this use if you can afford it. I'd go with 64 GB RAM here if it were mine. Have seen examples of users reporting as much as 35 GB RAM usage during Flight Sim play, and I suggest you may want the extra RAM headroom.
