I know there hasn't been time to tell much, but what is the outlook on the first wave of the z77 mobos? Everyone knows what happened with the sandy bridges at first. This would not be for me, but  for my dad, so stability is key.  He tends to run computers to their last legs (his current Dell is 7 years old).  As far as use, he does some gaming on a 1080 screen (flight sims mostly) and a lot of Mathematica and MatLab number crunching (he's a retired engineer).

So are the new chips and boards worth it, or should we just go with a B3 revision sandy bridge and a 2500k?

Seems to be perfectly fine, the CPUs don't overclock high as the Sand Bridge ones, but, they are faster. It's a good platform.
