If you are going to be streaming while gaming on the same machine, I'd recommend Ryzen:
https://www.youtube.com/watch?v=jludqTnPpnU Also, at 5K (if you meant 5K resolution), you'll want SLI 1080 Ti cards, as you're pushing around double the number of pixels as 4K.
