At that budget, your best bet is one of the Lynx "Best Sellers" Either the level 3 "Best" or the level 4 "Ultimate will meet your needs. The difference is entirely in the graphics card. The RTX 2060 is a solid choice for 1080p monitors, the 2070 SUPER is the card for 1440p. Either one will power a two monitor set-up without a hitch. If you can stretch it just a bit, the Ultimate is obviously better, but the savings on the 2060 could help with future upgrades. Either choice is a pretty strong rig for the money.
